Why Purslane?

Have you ever made a recipe with purslane? Purslane is a rich source of omega-3 fatty acids, vitamins A, C, and E, as well as minerals including calcium, magnesium, and potassium. You’ll need the following to create a delicious purslane dish with a Turkish flair:

 

Two cups of fresh purslane leaves and tender stems
One big onion, coarsely chopped
Two cloves of minced garlic
Two medium tomatoes, chopped
One tablespoon of olive oil
A single teaspoon of paprika
Season with salt and pepper to taste.
Lemon juice (not necessary)

 

To prepare the purslane, start by thoroughly washing it to remove any dirt or grit. Trim any tough stems and leaves and save the sensitive ones.

Heat the olive oil in a large skillet over medium heat in order to sauté the garlic and onion. Cook the diced onion and minced garlic until they are tender and fragrant.

Cook the diced tomatoes for 5 to 7 minutes, or until they start to break down and form a sauce, after adding the tomatoes.

Add the purslane to the skillet and stir it well with the tomato mixture to cook it. Add the paprika, salt, and pepper. Cook for about 5 minutes, or until the purslane is tender but still somewhat crunchy.

Finish with Lemon Juice: To add even more flavor, drizzle some lemon juice over the food right before serving.
